Finca Maputo, run by former Doctors Without Borders medics Henry and Verena Gaibor, specialises in honey-processed lots and has the Taza Dorada podiums to prove it. This Sidra honey jumped off the preshipment table for Scenery and lands singing — sweet aromatics giving way to raspberry jam, blood orange and fig, with nectarine and a hibiscus lift. A more delicate, structured cup than the wilder naturals on the sheet.
