VARIETY: PINK BOURBON

Pink Bourbon is a coffee variety known for its pink or salmon-coloured ripe cherries. In the cup, it's often prized for a very elegant profile: floral aromatics, bright acidity, and juicy fruit sweetness.

PROCESS: HONEY WINE YEAST

A honey wine yeast process begins by removing the skin and pulp from the coffee cherry while keeping part of the mucilage on the bean during drying. The coffee is then fermented with wine yeast to steer the fermentation in a more controlled way and lift aromatic complexity. This method usually produces a cup with layered sweetness, a rounder body, and more expressive fruit and floral character.

PROCESS: RED HONEY

Red honey is a honey process where the cherry is depulped, but some sticky mucilage is left on the parchment during drying. There's no actual honey involved—the name comes from the honey-like texture of the mucilage. It sits stylistically between washed and natural processing.
