About the producer

Wilder Lasso is a veterinarian specialised in livestock farming. As the coffee price declined in 2016 and his father fell seriously ill, he decided to bring the family farm up to speed with his brother. Initially their coffees scored 80–83 points; Wilder began examining soil samples and using targeted nutrients to neutralise pH and increase nutrient availability — what he calls precision agriculture.

Processing: After harvest the cherries are pulped immediately and placed in sealed blue fermentation tanks for 60 hours, then fully washed and dried in marquesinas over 14 days.

Variety: This Sidamo Heirloom is the result of a happy experiment — the exporter and Wilder germinated a sample of green coffee. Around 1,200 trees now grow at El Rubí; this is the first small harvest, with a profile that's floral with Ethiopian spiciness, Colombian creamy body, and tropical fruits.
